Potential Phaneuf trades:
Anaheim in my oppinion makes sense. They've got loads of cap room, and a great top 3 D. Adding a big top 4 would push them over the top. Some good goaltending and continuing to produce could push them to a cup in the next 1-2 years.
Toronto:
Phaneuf + 4th
Anaheim:
Ritchie + 2nd or Theodore + 1st
If Slava isn't allowed back to LA I think they could target someone like Dion.
Toronto:
Phaneuf + 3rd
LA:
Toffoli + Gravel + 2nd
Stars need something back on D. They don't have solid goaltending so they need to keep pucks away from the net if they're ever going to make something happen while they have Benn and Seguin in their prime.
Toronto:
Phaneuf + 3rd
Dallas:
Honka + 1st
Edmonton has too much offensive talent to be able to capitalize on all of their prospects. They need a solid D with some (not very good) leadership experience to help transition Nurse and Reinhart.
Toronto:
Phaneuf + Bozak (Fills 3rd line hole)
Edmonton:
Draisaitl + 3rd

I like the destinations, might even add Boston who could use a top 4 D man and Chara only has 1 or 2 years left.
Overall, I think the return you proposed is a little high though in most cases (especially Edmonton). I don't want to see Leafs retain any salary for Phaneuf, which could hurt the return a little.

Gravel is a dud, don't look at his EA sports NHL15 potential rating and think he'll turn into anything in reality, still just a 22 year old prospect, who shoots left, medium size and average skating. He does have a good resume with winning a calder cup with manchester

Would love that Anaheim trade. If it were me they would have meat Ritchie and Theodore. They almost never trade their picks.
That Edmonton trade looks nice as well.

Gravel will be a solid 4th-5th D , which is where we're going to have holes to plug eventually. Leafers Unite, only team that would be tight on budget would be LA, but if slava's and richard's contracts are both gone they could afford.

4th-5th D? Meaning what? He'll either be a 2nd pairing or 3rd pairing guy? Or a top 4 or a top 6? Listen dude, if Scott Harrington is a middling prospect that will most likely make the NHL, then Gravel will be filling up Brian Papineau's water bottle
